10-十一烯酸是一種含11個碳原子的不飽和脂肪酸，結構式CH2＝CH(CH2)8COOH。
室溫左右，十一烯酸為無色有光澤、有水果特殊氣味的液體，或無色具腐敗氣味的潮解固體。微溶於水，溶於乙醇、乙醚。低毒，有輕微的刺激性[4]。
蓖麻油（主要成分為蓖麻油酸甘油酯）與甲醇進行酯交換後，經高溫裂解產生十一烯酸甲酯，再經皂化、酸化，得到十一烯酸，並副產庚醛、甘油等產品。
混合特性[編輯]於1996年的研究發現十一烯酸混合下列物質，或精油可產生抗真菌特性。[5]
